Oki Hayashi is a young Japanese pastry chef trained in France.
A graduate of the Tsuji Culinary Institute, he moved to Alsace in 2015 to train at the renowned pâtisserie “Jacques” in Mulhouse. After returning to Japan, he joined the prestigious Taneya house, followed by Club Harie. In 2018, he became a finalist in the “Luxardo Gran Premio” competition, finishing 3rd at the national level.
At just 29 years old (as of May 2025), he is also recognized as an entrepreneur. He contributed to the product development of the brand BASE FOOD, which went public in 2022.
“Strawberry Parfait – Flower Field”
Oki Hayashi’s signature creation, this dessert is a reimagined version of the recipe that earned him third place in the 2018 Luxardo Gran Premio competition.
It features fresh strawberries, amaretto mousse, raspberry jelly, crispy crumble, almond sponge cake, French vanilla ice cream, and white chocolate mousse. The dessert is elegantly adorned with nadeshiko flowers and silver leaf.
