Meet master confectioner Eijun Mitsubori at Japan Expo!
Eijun Mitsubori is a renowned master of Japanese pastry. He is the family head of the Ichika-style confectionery line, the executive director of the Izumiya company specializing in Japanese pastries, and the representative director of the Ichika-style Confectionery Association. He is also a director of Meibi Co, Ltd, a company specializing in wagashi utensils, and a member of the board of directors of the Japan Sweets Association.
He has been featured in various media since his television appearance in 2007. Attracted by the expressive power of nerikiri, he has taught and led workshops in Japan and abroad to promote the confectionery. He is one of the main pioneers of the next-generation art of wagashi, "Ongenoshin", a traditional Japanese confectionery.
Unlike conventional commercial demonstrations, "The Art of Confectionery" focuses on "captivating wagashi" as an art form, from the act of making wagashi to the art of making wagashi.
