Goma-ae: veggies and sesame

The Washoku area was a delight for foodies at Japan Expo last July: if you can’t remember the recipes, it’s time to catch up. Follow Miyuki JO's, Washoku coordinator, instructions to prepare delicious vegetables with a flavor of sesame!

From today on until December, we welcome Japanese cuisine fans and chefs-to-be with a series of recipes from the Washoku area at Japan Expo 16th Impact last July.

Let’s start with Miyuki JO's goma-ae, a delicious side dish of vegetables and sesame. To find out more recipes, visit our website every week: we’ll publish one or two more recipes every week until Christmas!

Ingredients

For the sauce

  • 45g white sesame
  • 15ml soy sauce
  • 10ml mirin (sweet rice wine)

Vegetables

  • 10 string beans (ingen)
  • 1/2 carrot (nin-jin)
  • 1/2 zucchini 

Ingen no Goma-ae

  • Grind the white sesame seeds well and mix it with soy sauce and mirin.
  • Boil the string beans and cut it into bite-size pieces.
  • Mix the sauce and string beans very well.

Ninjin no Goma-ae

  • Grind the white sesame seeds well and mix it with soy sauce and mirin.
  • Cut the carrots into fine strips and boil them.
  • Mix the carrots and sauce very well.

Zucchini no Goma-ae

  • Grind the white sesame seeds well and mix it with soy sauce and mirin.
  • Cut the Zucchini into thin slices.
  • Mix the zucchini and sauce very well.

 

Tip 
If you have the grinded sesame paste ready, it will also go well with other vegetables such as broccoli, cucumber and tomato.
