Tofu-hamburger recipe

You don’t have a clue how to cook tofu? Miyuki JO gave you her tofu-hamburger recipe at the Washoku area at Japan Expo last July and here it is for those who have missed it!

Ingredients for 3 or 4

  • 175g tofu
  • 100g minced chicken
  • 1g salt
  • 45ml soy sauce
  • 20ml mirin (sweet rice wine)
  • 2 shiso leaves (green perilla)

Recipe

  • Drain the excess water from the tofu.
  • Crush the tofu by hand and mix it well with minced chicken and salt.
  • Make 3 or 4 round burgers and stir fry both sides.
  • Add soy sauce and mirin in to the pan and simmer them lightly.
  • Serve them on the plate and put the finely cut shiso leave strips on top.

 

Tip
If you cannot find shiso leaves, other herbs such as basil can be used as a substitution.
