Miyuki JO’s chawan-mushi recipe

Do you know what chawan-mushi is? It’s a traditional Japanese dish made of an egg custard, usually cooked with chicken and shrimps. You want to try it? Then follow the recipe Miyuki JO gave you during her workshops at the Washoku area!

Ingredients for 3

  • 2 eggs
  • 300ml Japanese soup stock
  • 15ml mirin (sweet rice wine)
  • 5ml soy sauce
  • 6 small shrimps
  • 100g chicken thigh
  • 2 shiitake mushrooms

Recipe

  • Beat the eggs and strain them together with the Japanese soup stock using the strainer, then mix it with Mirin and soy sauce.
  • Cut the chicken thigh into bite-size pieces and cut the shiitake mushrooms into thin slices.
  • Put the shrimps, chicken and shiitake mushrooms into the dishes and pour the ingredients mixed in the first place.
  • Cover the dishes with foil and steam them until the mix get firm. 

 

Tip
If you don’t have a steamer, you can put some water in the pan and cover it, and use it as a steamer.
